Marigold Catering, as one of four exclusive caterers, was everywhere during the July 18-21 Republican National Convention Quicken Loans Arena, Freedom Plaza, Grays Armory, Glidden House, Severance Hall, MOCA, and Crawford Auto Museum. But to say the catering company spread itself thin would be a misnomer. According to President Joan Rosenthal, Marigold prepared to serve more than 2,500 meals per day over four consecutive days while catering 27 events per day at Quicken Loans Arena and all daily events and concerts at Grays Armory, as well as operating two bars and three food stands that would serve 5,000 people daily on Freedom Plaza. To manage this, the company after conferring with a Tampa, Fla.-based company that had catered the 2012 RNC “created and activated a bulletproof plan” that included: meticulous menu planning and coordination; precise estimating of food and beverage inventory needs; ordering 2,500 bottles of wine, 140 cases of liquor, and more than 20,000 bottles of water and soft drinks; locking in 4,500-plus miscellaneous center-of-the-plate proteins from a primary food vendor; strategizing with vendors on deliveries and navigating rings of security; conducting frequent meetings with city health officials; working with the FDA to ensure compliance with food handling criteria; sourcing a 26-foot refrigerated truck to accommodate food storage; arranging deliveries between 1 a.m. and 5 a.m. to more than 20 locations; and prepping and freezing 5,000 individual handmade hors d’oeuvres and individual desserts. Marigold needed 300 trained and credentialed staff people per day, which meant hiring 30 out-of-state workers through its membership with Leading Caterers of America, and enlisting the services of Shoreby Club and Shaker Country Club staff, and engaging with three local temp agencies. “It was an exhausting but exhilarating opportunity for us to make the spotlight on our beloved city shine just a little bit brighter,” Rosenthal says. “And one we wouldn’t trade for the world.”
